There are a great many variations on the simit recipe. Some instructions will advise you to twist the dough, giving the simit the appearance of intertwined rings. Some will advise you to use more or less of one ingredient. Family and regional traditional recipes may have unique ingredients and some recipes may just bear only a passing resemblance to and influence from the sesame topped ring of bread, famous on the streets of Instanbul. Preparation Thoroughly beat the eggs and to them add the sugar, milk and gently melted butter. Carefully add and fold in the flour and baking powder and work into a lighlty kneaded dough. Small balls of dough can be taken and rolled into 200mm long 'sausage' shaped strips. These can then be folden into three and squeezed together. Lightly brush the tops with whisked egg and sprinkle with the sesame seeds. Place on a baking tray in a moderate heat (350-400 deg F) oven and cook for approximately 30 minutes, until the simit have turned a golden brown |
